Roar Recipes: A treat from Spain

For our first Roar Recipe, we asked Antonio Rebola-Iranzo, one of four exchange students at Del Campo, for a suggestion. He likes Gazpacho, a delicious soup recipe that his mother makes, which is very common in Spain and Portugal. It is made of tomatoes and other vegetables, and various spices. It is served cold.

Ingredients needed:

  • ½ or 1.1 pound of ripe tomatoes
  • ½ Green bell pepper (chopped)
  • 1 clove of garlic
  • ½ Cucumber (peeled, seeded, and chopped)
  • 1/10 liter or 7 tablespoons of olive oil
  • 4 tablespoons of wine vinegar
  • 1 slice of bread

Step 1: Soak the bread in water. Then, scald the tomatoes, remove the skins and add them to the food processor/blender. Next, add the cucumber and the green bell pepper as well as the clove of garlic, and the bread that was previously soaked in water.

Step 2: Blend everything together, then add the vinegar, some salt, and olive oil gradually. Make sure you stir regularly. Use a colander (no chunks).

 Serve it and enjoy!
